- Peel and cut carrots into 2 inch sticks (or use baby carrots)
- Add carrots to pot
- Add 1/4 cup sugar and 4 tbps butter
- Add enough water to steam the carrots (about an inch of water or enough to cover half the carrots) - do not completely cover them in water
- Bring to boil and then let it boil lightly with lid off until the carrots are cooked and all the water has evaporated, leaving a candied texture. Keep a close eye on these so the sugar does not burn the pan!
Notes: If the water should evaporate and carrots are not cooked (happens sometimes), simply add more water, sugar and butter.
