Candied Carrots

Costello kid favorite

  1. Peel and cut carrots into 2 inch sticks (or use baby carrots)
  2. Add carrots to pot
  3. Add 1/4 cup sugar and 4 tbps butter
  4. Add enough water to steam the carrots (about an inch of water or enough to cover half the carrots) - do not completely cover them in water
  5. Bring to boil and then let it boil lightly with lid off until the carrots are cooked and all the water has evaporated, leaving a candied texture.  Keep a close eye on these so the sugar does not burn the pan!

Notes:  If the water should evaporate and carrots are not cooked (happens sometimes), simply add more water, sugar and butter.

If you happen to add too MUCH water, and the carrots are close to done, you can drain some water and add more sugar/butter to what's left!
